It's a given that some of the best fresh seafood in the world is in Seattle. You can get fresh, good fish just about anywhere in the city, but each place has its own specialty. If you want some delicious steamed mussels, you need to make a reservation at Maximilien. The place also has amazing black cod and cassoulet.
The restaurant isn't cheap but neither is the food, and the prices are pretty reasonable when you consider a tasting menu can be purchased for $58. Keep in mind than an ounce of caviar for the table will run you $140.
